Creamy Sweet Potato Chicken Soup

Makes 4 servings.

Ingredients

Directions

  1. Add olive oil to a large pot over medium heat. Once warm, add shallot and garlic and sauté for 2-3 minutes.
  2. Toss in carrots, celery, and spices. Sauté for about 5 minutes (until veggies soften slightly).
  3. Next, add raw chicken, sweet potato chunks, and broth. Make sure chicken is fully submerged in the broth.
  4. Bring to a gentle boil, then reduce heat to simmer, and cook for 25-30 minutes minutes (until potatoes are soft and chicken is fully cooked).
  5. Remove chicken and slice.
  6. Remove the potato chunks and add to a blender along with yogurt and about 2/3 cup broth from the pot. Blend until smooth and creamy.
  7. Add the potato “cream” and sliced chicken back to the pot and stir.
  8. Taste and add more salt and pepper as needed.
  9. I had some arugula about to go bad so I added a few handfuls. Parsley is also so so good in here
  10. Enjoy!
