- In a shallow bowl, combine garlic, salt, pepper and oil & stir.
- Add tomatoes and basil.
- Toss gently and set aside.
- Cut bread in half, lengthwise. Or cut bread into slantwise pieces.
- Spoon tomatoes onto each half and drizzle with remaining oil (if desired sprinkle with cheese).
- Broil until golden brown – cut and serve immediately.
