Cozy chicken and dumpling soup - perfect for when it's chilly outside or you need a comfort meal!

Directions

  1. To a large pot with a few tablespoons of oil, sear the chicken breasts on both sides until golden brown. Remove to a clean plate and set aside.
  2. Add the butter and vegetables and season with salt and pepper. Cook for 3-5 minutes until the vegetables soften and start to turn translucent.
  3. Add the garlic and cook until fragrant.
  4. Stir in the flour and cook for a minute.
  5. Stir in the chicken broth, add the bay leaves and bring to a boil.
  6. Add the chicken back in, cover and reduce to a simmer for 20 minutes.
  7. Meanwhile, mix the dumpling mixture.
  8. Remove the chicken and shred with forks, then return to the pot.
  9. Stir in the heavy cream.
  10. Using an ice cream scoop or two spoons, spoon 1 tbsp-sized dumplings into soup.
  11. Cover and simmer for 15 minutes.
  12. Enjoy!
