Chicken and Dumpling Soup for the Soul

Cozy chicken and dumpling soup - perfect for when it's chilly outside or you need a comfort meal!

- To a large pot with a few tablespoons of oil, sear the chicken breasts on both sides until golden brown. Remove to a clean plate and set aside.
- Add the butter and vegetables and season with salt and pepper. Cook for 3-5 minutes until the vegetables soften and start to turn translucent.
- Add the garlic and cook until fragrant.
- Stir in the flour and cook for a minute.
- Stir in the chicken broth, add the bay leaves and bring to a boil.
- Add the chicken back in, cover and reduce to a simmer for 20 minutes.
- Meanwhile, mix the dumpling mixture.
- Remove the chicken and shred with forks, then return to the pot.
- Stir in the heavy cream.
- Using an ice cream scoop or two spoons, spoon 1 tbsp-sized dumplings into soup.
- Cover and simmer for 15 minutes.
- Enjoy!
