Chicken Fried Rice

My go-to throw together dinner for a busy weeknight! This chicken fried rice has minimal prep and comes together in one pan.

Ingredients

  1. In a large pan, heat 1/2 tbsp sesame oil and 1/2 tbsp olive oil over medium heat. Once hot, add chicken, season lightly with salt and pepper and sauté until cooked through, about 5 - 6 minutes. Transfer chicken to a bowl and set aside
  2. Return the pan to medium heat, add remaining 1/2 tbsp sesame oil and 1/2 tbsp olive oil. Add diced onion and sauté for 1 minute. Then add peas and carrots and sauté for another minute.
  3. Toss in garlic and ginger, mix and sauté 1 minute longer.
  4. Push veggies to the side of the pan, add eggs in center and scramble until fully cooked
  5. Add the chicken and rice to the pan. Add the soy sauce, mix to combine.
  6. Season with salt and pepper to taste.
  7. Serve immediately and enjoy!
