Chicken Fried Rice

My go-to throw together dinner for a busy weeknight! This chicken fried rice has minimal prep and comes together in one pan.

- In a large pan, heat 1/2 tbsp sesame oil and 1/2 tbsp olive oil over medium heat. Once hot, add chicken, season lightly with salt and pepper and sauté until cooked through, about 5 - 6 minutes. Transfer chicken to a bowl and set aside
- Return the pan to medium heat, add remaining 1/2 tbsp sesame oil and 1/2 tbsp olive oil. Add diced onion and sauté for 1 minute. Then add peas and carrots and sauté for another minute.
- Toss in garlic and ginger, mix and sauté 1 minute longer.
- Push veggies to the side of the pan, add eggs in center and scramble until fully cooked
- Add the chicken and rice to the pan. Add the soy sauce, mix to combine.
- Season with salt and pepper to taste.
- Serve immediately and enjoy!
