Potato leek soup is a classic comfort food recipe combining endlessly creamy potatoes with the subtle oniony flavor of sautéed leek. You can serve potato leek soup as a light appetizer, as a filling main course, or make it for meal prep. It’s delicious either way.

Ingredients

Directions

  1. Chop leek - cut in half, rinse, finely chop.
  2. Add leek, onion, to medium heat Dutch oven with olive oil on bottom.
  3. Cut potatoes into 6ths, add to pot.
  4. Add vegetable broth, thyme, bay leaves, salt and pepper.
  5. Stir and cover, bring to a boil.
  6. Simmer on low heat until potatoes are tender.
  7. Blend with immersion blender.
  8. Add salt to taste.
  9. Serve with chives, salt, olive oil and crusty bread.
  10. Enjoy!
