Easy Potato Leek Soup

Potato leek soup is a classic comfort food recipe combining endlessly creamy potatoes with the subtle oniony flavor of sautéed leek. You can serve potato leek soup as a light appetizer, as a filling main course, or make it for meal prep. It’s delicious either way.

Makes 6 servings.

Directions
- Chop leek - cut in half, rinse, finely chop.
- Add leek, onion, to medium heat Dutch oven with olive oil on bottom.
- Cut potatoes into 6ths, add to pot.
- Add vegetable broth, thyme, bay leaves, salt and pepper.
- Stir and cover, bring to a boil.
- Simmer on low heat until potatoes are tender.
- Blend with immersion blender.
- Add salt to taste.
- Serve with chives, salt, olive oil and crusty bread.
- Enjoy!
