Directions

Fish
  1. Season cod filets with salt and pepper and set aside.
  2. Combine AP flour, rice flour, baking powder, Garlic powder, Onion powder, lager, and vodka into a bowl and combine. This is your wet batter.
  3. Pat dry the cod filet and coat in extra rice flour then coat in wet batter.
  4. Immediately fry at 350F until golden brown and crispy Pro tip: Use your hands or a large spoon to drizzle on some batter into the oil, this will give you extra crispies, its very nice.
Chips
  1. Peel and slice potatoes into thick slices and place in water to wash off the starch.
  2. After starch has been washed off from the potatoes, place the chips into boiling water and boil for 10 minutes or until they're ready to fall apart. Remove from the water and pat dry (like really, really dry).
  3. Fry the fries at 270°F until the fries take on some slight color. Should be around golden blonde.
  4. Remove the fries from the oil and place in a freezer for about 2 hours, overnight preferred, until the outside becomes dehydrated and the fries are solid.
  5. Raise the temp of the oil to 360-370°F and fry once more until golden brown.
Tartar Sauce
  1. Mix and set aside.
  2. Enjoy!
