Jamaican Bulla Cakes

Gingery cakes, perfect cut in half, toasted and buttered for a refreshing tasting breakfast.

Directions
- Dissolve sugar, salt in the water, and add in the ginger, vanilla, molasses, and margarine.
- Sift together all the dry ingredients, and combine with the liquid gradually. The dough must be clammy and heavy.
- Place the dough on a generously floured board and dust the dough with flour until it is manageable.
- Roll it out to a thickness of about 1/4" and cut into slices using a knife or rounds using a sharp edged bowl.
- Bake in the oven at 375° for 15 minutes or until the bottoms are golden brown.

Very tasty! Imagine a Tim Hortons original donut, but heartier and more gingery. Only downside is the dough is pretty messy at the rolling-out stage. Well worth the struggle though!
Next time I'd try adding a bit more flour to the dough to make transfering the dough from the bowl to the board easier.
I'd also like to try adding a bit of cinnamon next time.
