Gingery cakes, perfect cut in half, toasted and buttered for a refreshing tasting breakfast.

Makes 24 servings.

Directions

  1. Dissolve sugar, salt in the water, and add in the ginger, vanilla, molasses, and margarine.
  2. Sift together all the dry ingredients, and combine with the liquid gradually. The dough must be clammy and heavy.
  3. Place the dough on a generously floured board and dust the dough with flour until it is manageable.
  4. Roll it out to a thickness of about 1/4" and cut into slices using a knife or rounds using a sharp edged bowl.
  5. Bake in the oven at 375° for 15 minutes or until the bottoms are golden brown.

Very tasty! Imagine a Tim Hortons original donut, but heartier and more gingery. Only downside is the dough is pretty messy at the rolling-out stage. Well worth the struggle though!
Next time I'd try adding a bit more flour to the dough to make transfering the dough from the bowl to the board easier. I'd also like to try adding a bit of cinnamon next time.
