Kiribath with Sambal & Chicken Curry

Try this delicious Sri Lankan dish for a cozy comfort meal!

Makes 4 servings.

Directions
- Mix chicken curry ingredients together and leave to marinate for 30-60 minutes.
- Sauté the other half of the onion in 3-4 tbsp ghee and drop in chicken
- Mix.
- Cook on low heat till done and quite evaporated.
- Add yogurt and cook for another 20 minutes or so.
- Pulse sambal ingredients together in a food processor until finely chopped but not a purée.
- Add salt and fresh lime juice to taste (it needs to be strong from the chili, lime and salt) but only when serving, as it can tend to go bitter if done for too long before serving.
