Roasted Garlic Autumn Root Vegetable Mash

Try this delicious autumnal mash around Thanksgiving or whenever you want a cozy mash!

- Roast the head of garlic.
- Add oilive oil to your instant pot
- Toss in onions and cook until softened, about 2-3 minutes.
- Add butternut squash, carrots, and cauliflower into the pot.
- Squeeze in the roasted garlic bulbs.
- Cook in the instant pot under high pressure for 5 minutes.
- Season with salt and pepper.
- Purée until smooth.
