Tomato Soup

Perfect for a cozy meal during soup season or whenever you're craving a nice tomato soup!

Makes 4 servings.

- Wash and dry 2 cartons cherry tomatoes, 2-3 heirloom tomatoes, 5-7 slicing or roma tomatoes.
- Slice your big tomatoes into fours.
- Wash and cut a red and orange bell pepper.
- Chop a yellow onion into quarters
- Peel 2 bulbs of garlic (no need to chop).
- Place everything on a baking tray and season with Italian seasonings, salt, pepper, and add 5-6 sun dried tomatoes.
- Drizzle in high quality olive oil.
- Roast in the oven at 375°F for 45 minutes.
- Transfer to a pot add a handful of basil (don’t roast the basil it will burn) and emulsify or to your blender to mix.
- Back on the stove to stay warm, add in a 1/3 cup of half and half, or a cup of milk.
- Add a parmesan rind and 1 cup of Parmesan cheese.
- Heat on low while you make grilled cheese!
- Take the parm rind out, serve it on up!
- Add mozzarella balls for some fun!
- Enjoy!
